I’ve written about it before, but one of the easiest ways to ensure you eat healthy throughout the week, is to have healthy snacks pre-made and ready to go. One of my favourite snacks to make on the weekends are Peanut Butter Snack Bites made using Kraft All Natural Smooth Peanut Butter. They give you a great dose of healthy fats, protein, and a complex carbohydrate and are delicious to boot!
I remember making these when I was a child, and I also remember making a version of them with the kids I babysat for growing up. No-bake recipes like this are a wonderful way to introduce children to baking and creating in the kitchen when they may still be too young to use the stove or oven (or kitchen appliances). There is always a huge sense of accomplishment when you make something yourself, especially as a child. I remember making no-bake snacks like this with my mom and I know the kids I babysat for remember making them with me. Making recipes together in the kitchen really does create a lasting memory, more so than just eating the finished recipe. Not only that, but it helps teach kids how to cook for themselves, a skill that will serve them for the rest of their lives.
I can’t help but think how fun it would be to get a few kids together, set them each up with the base ingredients and let them each choose their own add-in’s to make their snack bites their own! In fact I think I need to borrow my niece and/or nephew one day soon to make some with them. They are both super active and I think they’d enjoy customizing their snack bites to their own tastes.
These days, I try to add an extra healthy spin on most of my snacks, which is easy when you are already starting with three really healthy ingredients: Kraft All Natural Smooth Peanut Butter, large flaked rolled oats, and honey.
To up the nutrition factor in my snack bites just a bit more, I added hemp hearts, chia and flax seeds. All of which are filled with heart healthy fats, and add extra protein and fibre to the recipe. A little unsweetened coconut adds even more flavour and healthy fats while dark chocolate chips (try to find ones that are at least 70% dark chocolate), help elevate these snack bites to the next level. I mean seriously, adding chocolate to a peanut butter bite just makes sense. Plus, dark chocolate = antioxidants. 😉 You’re welcome. MIX together all dry in a medium bowl, then add the peanut butter and honey and mix until blended. ROLL into 20 (1-inch) balls, using about 2 Tbsp for each ball CHILL in the refrigerator for 20-30 minutes

I keep mine in an airtight container in my refrigerator, and take 2-3 with me in a container when I head out of the door in the mornings to teach for a between classes snack. Sometimes I split them up in two snacks, and sometimes I’m nice enough to share one with another hungry fitness goer. That shows you how much I love my participants, I’ll even share my snacks. 😉

Mmm… these look good. I am going so see if I can come up with something similar without the oats. More coconut and hemp perhaps. Nice combo!
