Last week I shared a Chicken Taco Salad Jar recipe with you from the new President’s Choice Insider’s Collection. Today I’m back to share another recipe – one I’ve not yet tried but am dying to, Thai-Style Beet Salad. One of the new “Must Try” products is their PC Beet Slaw which I am so amped to try. Never in my life would I have thought I would say I was “amped to try” a BEET salad, yet here we are. Apparently, everyone else has been eager to try it as well because every time I’ve been at the Superstore in the past few weeks it’s been sold out. So it looks like I’ll have to wait at least a little bit longer. I figured if I shared the recipe now, if anyone else was excited to try it they would now know to be on the lookout for the beet slaw when shopping!

Holy yum, I cannot wait to dig into this salad.

Thai-Style Beet Salad

Give the PC® Beet Slaw a Thai twist with lime, fish sauce, peanuts and cilantro. Cilantro stems have lots of flavour and can be chopped up to use in salads as in this recipe, or puréed into sauces such as pesto.

Ingredients

• 1/3 cup (75 mL) PC® Mayonnaise
• 3 tbsp (45 mL) fresh lime juice
• 1 tbsp (15 mL) each granulated sugar and fish sauce
• ½ tsp (2 mL) each salt and freshly ground black pepper
• 1 pkg (340 g) PC® Beet Slaw
• 1/3 cup (75 mL) chopped fresh cilantro (including tender stems)
• 2 green onions, chopped
• 1/2 cup (125 mL) chopped PC® Dry-Roasted Unsalted Peanuts

Instructions

Stir together mayonnaise, lime juice, sugar, fish sauce, salt and pepper in large bowl. Add slaw; toss until well coated. Stir in cilantro and green onions. Cover and chill 30 minutes.

Stir in peanuts.

If you aren’t a mayo fan, I bet a fresh avocado dressing would be delicious as well. Yum!

So make a mental note Canadians, to seek out the PC Beet Slaw at your local store, and everyone else – well you’ll either need to come visit us in Canada or make your own at home!

P.S. PC also has a pre-chopped kale slaw i store which is just like the adored sweet kale salad kit – but without the dressing and toppings so you can make/add your own. Much less expensive and every bit as delicious!
