Spring is in the air, and this time of year is when I find people are starting to get more interested in salads and cold meals or side dishes. Let’s face it, winter is cold and personally I find eating cold meals when I’m cold well, cold! But when the outside world starts warming up, a nice fresh salad is often just what the doctor ordered! This chicken taco salad jar is not only fresh and pretty, but it’s also portable making a great addition to a packed lunch.
Layering your ingredients with the dressing on the bottom, chicken and beans in the middle and lettuce and chips on top helps keep everything fresh and crispy, even if you make it the night before.
Toss together beans, corn, green onion, oil, lime juice, salt and pepper in small bowl. Set aside. Spoon dressing into bottom of 3-cup (750 mL) or 4-cup (1 L) wide-mouth jar with tight-fitting lid or airtight container. Layer in chicken, bean mixture, cheese, tomatoes, lettuce, cilantro and tortilla chips. Cover with lid and refrigerate until serving. To serve, transfer to bowl and toss to coat. TIP: This is a great way to use up leftover chicken. If you don’t have any on-hand, pan-fry or poach a small chicken breast, then use two forks to shed the chicken into bite-size pieces. Seriously, how delicious does that salad look? And from a meal prep standpoint, you could easily prepare all the components ahead of time and just assemble your salad the night before in a few minutes and have fresh lunches all week. And that’s my jam right there. Fast, easy, delicious.

I always love the way that these salad-in-a-jar mixes look but I’ve never made one so I have a stupid question: How do you eat it? Do you bring a bowl or other container and dump it in and mix it? Or are you meant to eat it straight out of the jar, scooping down to get a bit of everything?
I’m a dumper 😀 so yes I’d take a bowl, but I’m sure there are folks who eat right out of the jar
