Celebrating #WorldEggDay With My Favourite Egg Recipes

Today is World Egg Day! A day to celebrate the amazing egg, it’s egg-traordinary nutritional benefits and the lovely folks who help bring them to our tables.

We have all heard about eggs being the perfect food as they contain 6 grams of the highest quality protein and 14 important nutrients like vitamins A, D and E, folate and iron. Affordable, versatile and delicious, they are a staple in my family’s diet. In fact, one of our favourite gifts from recent years is the breakfast sandwich maker we received two or three years ago at Christmas. It’s so easy to toss all the ingredients in it (english muffin, cheese, bacon and an egg) and the maker goes to work creating a delicious hot breakfast for mornings when we are on the go that keeps us energized for the morning.

And when I’m travelling, nothing starts the morning off quite like a breakfast complete with two eggs over medium. Yum!

Did you know that across Canada and around the world, egg farmers collectively support close to 200 community programs, causes, charities and events?

Canadian egg farmers alone donate more than three million eggs each year to community food banks, school breakfast programs and charitable organizations, helping more people benefit from the goodness of eggs.

Through international partnerships, Canadian egg farmers are making an important different in vulnerable people’s lives. Through the Egg Farmers of Canada’s partnership with Heart for Africa, 74,000 hand-packed meals are delivered each month (or 880,000/year) to families in rural Sawaziland.

So while at first glance, World Egg Day may appear to be all about the incredible, edible egg, it is also about celebrating the egg farmers who work hard to product high-quality eggs, and give back to their communities by volunteering, fundraising and donating eggs.

To help us all celebrate World Egg Day, I’ve compiled some of my favourite egg recipes below.

When I’m in a hurry, a simple dish like my Sour Cream and Onion Scrambled Eggs always hits the spot,

sour cream and onion scrambled eggs are the prefect food for a late night meal after zumba, running or any other fitness workout that has left you hangry and tired! This recipe comes togeter in just a few minutes and will delight your tastebuds!

but when I have a little bit more time, I’m all about the poached eggs and Eggs Benedict!

Hollandaise tip: if you are making fresh hollandaise sauce but only need enough for one person, you can make it in a tall glass and use a milk frother instead of an immersion blender to emulsify it. It works really well – just make sure you clean the frother as soon as you’re done.

And for a delicious showstopper dessert, Creme Brûlée will definitely impress your friends and family!

I can’t think of a more delicious and indulgent way to celebrate eggs than Eggs Benedict – so that’s what I plan on having for supper tonight! And I encourage you to enjoy your favourite egg dish this evening as well. If you’re not in the mood for cooking stop by your local grocery store and maybe you can pick up some egg nog. It may seem a little early  but I’ve seen it in the grocery store already this season and it just happens to make the most amazing coffee add-in. Yum.

    Lots of great information in your article. One of my favorite uses of eggs is for German Pancakes -made with 6 eggs. Great for a light lunch or supper. I might make that tonight.

    I love eggs! They are one of the most verstile foods out there….and they are good for you!! I think I may have to check out your Creme Brulee recipe…yum!!

    i’m so jelious that your eggs benny look that AMAZING!! you’ll have to give me a hands on tutorial on how to make poached eggs!!

    while my girls are on a much smaller scale, i’m so proud to say i “help” farm eggs hehe I had no idea they do such amazing things!!
