Valentine’s Day is just around the corner, and while I’m not big on Valentine’s Day stuff (I’m generally not into buying cards and we rarely do gifts – normally it’s a dinner & movie sort of night for us), but because of work schedules we often “celebrate” on a day other than February 14th. This year we will both have the evening off since it’s a Sunday – but so will everyone else, so chances are we’ll be staying in. Which makes it the perfect time to try out a fun new recipe.

Last weekend I tried out those last two recipes, because you know, I don’t want to give you chocolate recipes that haven’t been tested. Listen, it’s a tough job, but I’m willing to take one for the team and get it done. 😉
First up I made the Chocolate Dipped Figs With Chevre Mousse Filling. My local store didn’t have fresh figs so as suggested in the attached recipe, I swapped them for Strawberries, and swapped the Chevre for cream cheese as that too was unavailable at the time. Otherwise I followed the recipe and while I thing figs will work a bit more easily for filling purposes (or perhaps I’m just not well trained on strawberry filling), they turned out looking pretty good, and tasting even better!


And the real sad part is, because of my husband’s Ulcerative Colitis, he can’t eat fresh fruit, so it was entirely up to me to eat all of them. Such a hardship. Next up I made the Chocolate Peanut Butter Banana Cups. I’m not typically a big banana fan, but since it was paired with peanut butter and chocolate (which make everything better), I decided to give it a go, and I’m glad I did.
I really thought making homemade peanut butter cups would be really difficult, but it was crazy easy. I don’t have silicone muffin liners so used regular paper ones, and because I did, I ended up with the awesome classic peanut butter cup edge!

These came together and hardened pretty quickly. Because I only had one bar of burnt toffee chocolate, I also used one regular bar and tossed some toffee bits I had in the cupboard in with them. As you can see in the photo, I also decided to throw a few bits on top for decoration!

The verdict? Delicious. They are the sort of thing you really can only eat one at a time. Which really makes it a great treat food since with the dark chocolate you feel satisfied after one, but with regular peanut butter cups I can eat like, 3 million and still want more.
