Eating healthy when in a hurry can be difficult. And with the lure of fast food it can be all to easy to take a trip to the drive thru instead of making something yourself. With my 5-minute burrito bowl, not only can you make a healthy meal fast but it’ll be less expensive and just as tasty as one from the local fast food joint (or hot bar)!

To make this delicious meal fast I’m using Minute Rice in their new 100% natural packaging. When looking to make healthy meals in a hurry, using shortcuts like Minute Rice save you time and money without derailing your healthy eating.
Heat your rice in the microwave per the package instructions. While rice is in the microwave, put your desired amount of chicken/beef or beans into your bowl. Add rice to bowl. Top with veggies and toppings (I used shallots, tomatoes, lettuce, cheese and plain Greek yogurt). Enjoy!!

This would also make a great work lunch since you can take the Minute Rice and a container with everything else in it, then at lunch time you just have to heat the rice and toss it with the rest of the ingredients. Super fast, filling, healthy and delicious!

I made these three times since you 1st posted them OMG there SOOO good!! i’ve always loved buritto bowls and knowing its this easy made them officially a staple at our house. i do add cumin & lime zest to the rice for a little more kick
