Last Wednesday we had a super blizzard day here in Nova Scotia. So what does one do when they are storm stayed at home? Why they make white chocolate chip red velvet cookies of course!
Last Tuesday I happened to see a photo of red velvet cookies on the Susie’s Shortbreads Facebook page which reminded me of the red velvet cake mix that President’s Choice had sent me before the holidays. So on stormy Wednesday, I decided it was time to make me some red velvet cookies.
Did you know you can make cookies from a cake mix? Because you totally can, and it’s super easy and really great for people who don’t usually bake as you only need a bowl, a spoon, eggs, cooking oil and a cake mix!
White Chocolate Chip Red Velvet Cookies {from a Cake Mix}
Ingredients
- 2 eggs
- 1 red velvet cake mix
- 1/2 cup of cooking oil
- 1 cup white chocolate chips
Directions
- Preheat oven to 350 C
- Combine oil, eggs and cake mix in bowl until moist
- Add white chocolate chips and mix
- Drop Tbsp sized balls onto cookie sheet (this scoop makes this step fun!)
- Bake for 10-12 minutes
Makes 2 dozen cookies.
The only problem with these cookies? They vanish much too quickly! One second they are there….the next they are gone!
And then all you can think about is how much you wish the cookie jar was still full…
