Sweet Potato Hash Recipe

Hi everybody! 😀 Happy Saturday!  I’m mildly depressed that my vacation is nearly over, but at the same time I am feeling better (yay!) and itching to get back to teaching.  

I’m back today to share with you another recipe from President’s Choice from PC.ca ‘s recipes section.  They recently added a lot of recipes to their website as part of their “Bring Healthier Home” campaign.  Today, I want to share with you a recipe for Sweet Potato Hash (which can be found on their website).

Sweet Potato Hash

Make this easy hash and top with over-easy eggs for a nutritious weeknight meal.  Full of vitamin C and beta-carotene, sweet potato and red pepper are two of the healthiest vegetables you can eat.

Serves: 2

Difficulty Level: Intermediate

Ingredients:

  • 2 Tbsp Olive Oil
  • 1 large red onion, chopped
  • 1 sweet red pepper, diced
  • 1 large PC Organics Sweet Potato, peeled & cut in 1/2 inch cubes
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 package PC Fresh Chives, chopped
  • 2 Eggs
Directions
  1. In large nonstick frying pan, heat 1 tbsp of the oil over medium-low heat.  Add onion and red pepper; cook for 4-6 minutes, stirring occasionally, or until softened and starting to brown.
  2. Increase heat to medium.  Add sweet potato; cook for 4-5 minutes, stirring occasionally, or until potatoes start to brown.  Stir in 1/2 cup water.  Continue cooking for 6-8 minutes longer or until potatoes are tender when pierced with tip of knife.  Season with half of salt and pepper.  Stir in chives.  Divide mixture between two plates.
  3. Wip pan clean with a paper towel.  Add remaining 1 tbsp oil; heat over medium heat.  Break eggs into pan; cook for 30 seconds.  Sprinkle with remaining salt and pepper.  Turn eggs over; cook for another 30 seconds or until cooked “over easy”.  Top each plate of sweet potatoes with a fried egg.
Per serving: 400 calories, 19g fat, 710 mg sodium, 46g carbohydrate, 9g fibre, 11g protein
