I don’t think it’s a secret around here that I love food – and that brownies tend to top my list of favourite desserts to consume. Knowing this, it should come as no surprise that I have spent a long time finding and perfecting the best microwave brownie recipe. A mug recipe to be more specific.
You see, just because I love brownies, doesn’t mean I always want to make a whole batch of brownies, sometimes a girl just wants one brownie! In the past I’ve made a lot of microwave mug cakes {meaning they are cooked in a coffee mug} and microwave brownies and there have always been two problems #1) they are dry or gloopy {that’s a technical term} #2) the egg. There is always an egg and the cake or brownie turns out tasting too eggy. No thanks.
Well, my friends, I have for you an eggless microwave brownie that takes less than 5 minutes to make and cook and isn’t dry, or gloopy or eggy.
Behold! The BEST Microwave brownie!
Eggless Microwave Brownies

Ingredients
- 1 Tbsp butter (melted)
- 1 Tbsp water
- pinch of salt
- 1/4 tsp vanilla
- 2 Tbsp sugar
- 2 Tbsp flour
- 1 Tbsp cocoa
Instructions
Mix butter, water, vanilla and salt in a microwave safe coffee mug or small bowl.
Add cocoa, sugar and flour and stir well to combine.
Batter will feel quite stiff and unlike a regular brownie batter.
Microwave on high for 40-90 seconds (how long depends on your microwave)
When done, the top will still appear slightly undercooked in the middle, but will be firm to the touch. You can also purposely under bake for more of a molten cake-like effect.
When finished my brownies generally look like this on the top
Sort of like one of those pudding cakes you get in a box. Do they still make those? My brother loved those things. Anyway…err on the safe side at first, it’s much easier to put it back in for a few more seconds than it is to fix burned or dried out brownies!
I seriously love this recipe, it’s delicious and really hits the spot when you are dying for a little brownie goodness. You can go from brownie-less to brownie heaven in under 5 minutes, without dirtying a bunch of dishes and it really makes the perfect sized treat.

This was so good. I was going to have it even without the ice cream, but there was vanilla in the freezer, so I couldn’t resist. I love that it used ingredients I already have, with nothing artificial. This recipe is a keeper!

Thank you for including a measurement for vanilla- my family bottles our own vanilla and this was very precise and to the point since most recipes involving vanilla just say to add “two drops.” The brownies were great, the instructions were precise, and thank you!
