Today I’m sharing a delicious Tropical Coconut Water Smoothie recipe I discovered recently,

But before I get to that, the Atlantic Super Store released a number of new healthy food items a few weeks ago in their stores, and they were kind enough to send me an assortment of the new products to try,

along with a gift card so I could pick up some of the new products in the store myself.  Included in the items I bought with the gift card was new new PC Coconut Water.

Tropical Coconut Water Smoothie

I’ll be honest with you, I’m not one of those people that loves the taste of plain coconut water.  I know it’s a great electrolyte replacement drink but I think it’s kind of gross all on it’s own, so I was excited to learn that PC has launched a number of recipes on their website using many of their new products including a smoothie using coconut water!

Tropical Coconut Water Smoothie

If you buy frozen fruit, you can make this tropical smoothie at a moment’s notice. If using fresh, you will get a better texture if you freeze the chunks for an hour before blending. Coconut water is a good source of potassium, a mineral that is helpful in regulating blood pressure

Serves: 4
Difficulty Level: Easy Wow

 
Ingredients:
2 cups pineapple chunks (fresh or frozen)
1 cup mango chunks (fresh or frozen)
1 cup PC Coconut Water from Concentrate
1/2 large ripe banana
1/2 cup PC 0% Greek Yogurt
2 tsp fresh lime juice
1. If using fresh fruit, place chunks together in a shallow dish and freeze for 1 hour
2. Place frozen fruit, coconut water, banana, yogurt and lime juice in blender & blend until smooth
3. Divide among four glasses
Per serving: 130 calories, fat 0.3g (0.1g saturated), sodium 55mg, carbohydrate 28g, fibre 3g, protein 4g.

Low in Saturated Fat
Low Sodium
Source of Fibre
Good Source of Potassium
 
I haven’t had a chance to give this smoothie a try yet, but am really looking forward to doing so – it sounds yummy!

    Great idea! I also do not like the taste of plain coconut water and feel like I’m missing out on the benefits. A smoothie just might work!

      Let me know if you try it! I’m on a special diet for medical reasons for a short time and am not suppose to eat those fruits so I can’t try it yet :/
