If you follow me on social media you probably already know I’ve been up to something this past week, so now I’m happy to let the proverbial cat out of the bag.
I’ve partnered with the Egg Farmers of Canada to help them launch their new network Eggcentric TV!

Eggcentric TV is devoted to sharing great egg recipes, tips and tricks and to help you find new ways to incorporate eggs into your diet more often.
Eggs are one of the most nutritious foods available and are often described as one of the healthiest foods on the planet. They contain a variety of nutrients and are a wonderful source of complete protein.

If you are anything like me, you think of eggs primarily as a breakfast food, and that is doing them a world of injustice. There are so many ways we can easily incorporate eggs into other meals, and I think it’s important to do so. Why? Because not only are eggs a fantastic source of nutrition, they are also relatively inexpensive and can be used in so many different ways. From scrambled eggs to quiche, hard boiled eggs to carbonara pasta, egg custard to poached, and everything in between.
Speaking of poaching, as part of my Eggbassadorship 😉 I got to hang out with The Kilted Chef one day last week to have him teach me how to make Eggs Benedict.

Eggs Benedict made for the perfect recipe because it uses eggs not one, but two ways. First in the poached egg, but also in the Hollandaise sauce. Which I found out has about a half pound of butter in it – no wonder it’s so delicious!
We ended up making three versions of the dish, one with ham, one with spinach, and one with shrimp. Seriously, how good do they look!?

My mother-in-law told my husband and his brothers when they moved out, “Always make sure you buy eggs when you get groceries.” I think it was her way of trying to keep her sons from starving to death when they went away for University, but she was right. As long as you have eggs, you’ll never go hungry!
