Here in Canada today is Victoria Day. It’s one of those holidays that is only sort of a holiday, with many people still having to work and not getting to enjoy a long weekend. But that doesn’t mean you can’t still celebrate in your own way – and a special dessert is always a great way to celebrate (in my books anyway)!
And what’s even better, is this recipe is really quick to make so you can even throw it together while supper is cooking and it’ll be eat to eat once you’re finished eating. How great is that!?
The original recipe comes from the Nature’s Path website and can be found here, I only made a couple changes which I’ve listed below:
- since there are only two of us, I cut the recipe in half
- because I cut the recipe in half I didn’t have the right sized pan so I made them into individual portions in ramekins
- I didn’t have strawberries so I swapped them for blueberries
- I use vanilla greek yogurt and left out the vanilla extract
The most difficult part of the recipe is mixing up the cream cheese filling, and even that is pretty easy. From start to finish it took me no more than 15 minutes to prepare, while still looking pretty impressive!
I gave the extra two servings to my parents and my mother wanted to know what I used for the crust because she thought it was tastier than a graham cracker crust. The magic ingredient was Nature’s Path Cornflakes! Who would have guessed? Not me!

Fresh berry crumbles and cobblers are my absolute favorite! Somehow, they just manage to capture the essence of summer in each bite.

My favourite is strawberry shortcake. It tastes decadent but if you use angel food cake and milk it doesn’t break the caloric bank (and it tastes REALLY good when the strawberry juices mingle with the milk and get sopped up by the angel food cake. Just sayin’!) 🙂
It would have to be a tie between fresh peach pie or just a simple plain bowl of blueberries.
