It’s been a little over four weeks since I started the #CoolerWithAlmondBreeze challenge, and you know what? I haven’t missed having cows milk in the house at all.
Before I continue, I want to say that I actually enjoy cows milk, and still drink it. But, I typically only used it for my cereal, cooking and drinking if I was having cookies or something 😉 The rest of the time I drink mostly water, tea and coffee. Because J is off cow’s milk, up until this challenge I was buying a small carton of regular milk for myself, and then a big carton of almond milk for J..

For some reason, I had always abstained from using almond milk in my own cereal, I think I had some notion that I wouldn’t like it (even
though I’ve used it in coffee many, many times). So imagine my surprise, or delight, when I actually tried it in my cereal, and prefer it to regular milk! There is just something about the added touch of vanilla that makes cereal that much tastier! And I can honestly say, if it wasn’t for this campaign, I doubt I would have ever tried it in cereal (yes, I’m weird).
The other place I mention I always used regular milk was in baking. Even though I know lots of other people who use almond milk instead of cows milk, I was dubious as to whether I would like it. But I’ve made cinnamon buns

using almond milk in both the dough and the icing and they were delicious! I used almond milk in the chocolate mini doughnut recipe I posted a few weeks back and they turned out really well,

and even made some dairy-free ice milk which considering I made it using snow was pretty decent.

The thing I like most about almond milk is the longer shelf life. Even when I bought the smallest carton of milk possible, it often went bad before I reached the end of the carton because I just didn’t use that much of it. Now I don’t have to worry about that because the shelf life for almond milk is so much longer!
One thing I will note though, is when making recipes that aren’t sweet, I use plain almond milk instead of vanilla. J once used vanilla almond milk to make Kraft Dinner, haha, he said it was okay, that it just had a hint of vanilla. Hahaha
While I’m still not too sure I’m ready to sit down and drink a glass of almond milk, for most all other uses I’m a total Almond Breeze convert. As for the times I need a tall glass of milk to wash down some chocolate chip cookies, well luckily for me I live next door to my parents, so I can just go steal some of theirs!
