Somehow, even when I plan our meals prior to grocery shopping I always neglect to think of meals for me for lunch. I always make sure I have everything figured out for supper, and for my husband’s lunches/breakfasts but not my own. Sometimes I am smart and make a big pot of soup on the weekend to get me through the week, but other times (like this week) I’m left scrambling for something to eat, that’s when the pita pizza can save the day!
Tuesday as I was driving home from my morning class (starving) I found myself in that same stupid situation. What to have for lunch. Then I drove by a pizza place and was inspired! Back in my days as an office worker I had the same lunch 5 days a week for years. I never got tired of it. But then I stopped working a 9-5 gig and seemingly got quite off track in the lunch dept.
As soon as I thought of it I wondered why it had taken my all this time to think of going back to my old standard lunch. I stopped at the store and picked up the one item I needed to pick up to make my lunches for the rest of the week and I was off.
Turn the oven on to 350 to preheat. Lay out pita(s) on a baking sheet. Top with sauce, chesse and toppings of your choosing Bake for 10 minutes. Enjoy! I didn't enter amounts for the ingredients as everyone likes different amounts of thins on their pizzas. Make it your own!

I expect there will be a lot of pita pizza consumption going on here, I’m already obsessed with them all over again. And FYI – for this hungry girl one doesn’t cut it. I make two and sometimes still wish I had another!
