Things happen when people are storm stayed. Things like baked mini chocoalte donuts.

Really, what was I expected to do? I had a mini donut pan just sitting there wishing to be used. How could I deny it?
The finished product is pretty tasty, though not really as dense as I would like to make it really “donut-like”, and next time I think I might leave the baking soda out to see if that makes them more dense.
I used this recipe but with the following changes in ingredients/measurements:
1/4 tsp of salt
2 1/2 Tbsp of Coconut Oil
1/3 cup of vanilla Almond Breeze almond milk
1/4 cup plain greek yogurt
Using my mini donut pan, the recipe made a full 3 dozen, and I found 6 minutes was the prefect baking time.

For the glaze I mixed a couple of tablespoons of almond milk with about 1/3-1/2 a cup of icing sugar (honestly I didn’t measure either item, I just eyeballed it) then dipped the top of each donut in the glaze. I left most of them plain, but decorated some with sprinkles and hemp hearts <—that was an experiment, and not one that I endorse.
As you can see from the top picture, I pipped the dough into the pan, it is by far the easiest way to make donuts, and if you were attempting to make them without a donut pain, that would be the only way to go.
All in all it was an easy (and tasty) snow day recipe. The next time you are craving a little chocolate sumthin’ these might just fit the bill!
